Observation: High temperature dishwasher is not able to reach 71'C minimum final rinse temperature at the plate surface. Dishwasher is measured at 69'C with probe thermometer. Staff is aware that the dishwasher is not functioning and has contacted a repair company and ordered the necessary parts for replacement. The 2-compartment sink is in use for manual warewashing.
Corrective Action(s): Repair the diswasher to ensure it is able to reach a minimum final rinse temperature of 71'C at the plate surface for adequate sanitation of dishes and utensils (as per approved sanitation plan). Continue to use the 2-compartment warewashing method to clean and sanitize all dishes, equipment and utensils. Do not use the dishwasher until a follow-up inspection is conducted to verify the dishwasher is functioning.

Routine Inspection Conducted

Observations:
- Walk-in cooler at 3'C
- Walk-in freezer at -20'C
- No hot-holding observed during inspection
- Temperature logs are maintained - good!
- General sanitation is satisfactory during inspection
- Hand washing stations are supplied with hot and cold running water, liquid soap and paper towel
- 2-compartment sink available with drain plugs and bleach. Staff able to explain how to properly clean and sanitize dishes.
- QUATs sanitizer spray bottle measured at 200 ppm QUATs concentration with test strip
- Chemicals are stored away from food
- Equipment is stored in a sanitary manner
- All food is stored covered and at least 6 inches off the floor
- No signs of pests during inspection
- FOODSAFE Level 1 trained staff is available on site
