Observation (CORRECTED DURING INSPECTION): - Sanitizing step required for kulfi molds.
- Operator informed that commercial dishwasher will be arriving soon
Corrective Action(s): - Ensure that in addition to washing and rinsing a sanitizing step is added to manual warewashing.
- Sanitizing step can be QUAT solution at 200ppm OR chlorine sanitizer solution at 100ppm

Comments

Routine inspection conducted.
- No production at the time of inspection. All ingredients/ products obtained from approved sources.
- Hand washing station in prep area fully equipped with soap, paper towels and hot/cold running water.
- All freezers below -18C.
- Upright fridge below 4C.
- Chlorine sanitizer solution available in spray bottle, concentration at 200ppm chlorine concentration.
- 3-compartment sink used for manual dishwashing, sink plugs available.
- No evidence of pests detected during time of inspection. Traps in place.
- Overall cleanliness and maintenance good at the time of inspection.
- Operator to install commercial dishwasher in premises, will be installed by 3-compartment sinks. Send specifications to Environmental Health Officer.
