205 - Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)]
Observation (CORRECTED DURING INSPECTION): 1) Three trays of samosas stored in the glass sliding door cooler had internal temperature ranging in between 8-11'C. Samosa production occurring at the time of the inspection. All samosas were made and placed in the cooler less than 1 hour prior to the inspection. OK. All moved to the walk-in cooler at this time.
2) Chopped onions (11'C), picked carrots - oil, spices, carrots (10'C) and chutney (9'C) placed at room temperature in the servery area. All moved to the prep cooler at this time.
Corrective Action(s): 1) Ensure no cold potentially hazardous food is stored in the broken glass sliding door cooler until repaired, as agreed at this time.
2) Do not store these foods at room temperature, but always in the prep cooler as discussed at this time. If to store at room temperature during lunch rush, keep small amount each time and discard leftover after 2 hours.

209 - Food not protected from contamination [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): 1) Onions placed right adjacent to the mop bucket, filled with dirty water. Operator was advised to move them to other location at this time.
2) Few uncovered foods observed from the walk-in cooler. Operator was advised to cover them at this time.
Corrective Action(s): Ensure all foods are stored in and properly covered with food grade materials at all times. Store food at designated food storage area, and NEVER by the cleaning tools/chemicals under any circumstances.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Major cleaning is required for all hard to reach areas within the facility.
Corrective Action(s): Ensure to have the following areas cleaned:
- All corners on floor
- Underneath large kitchen equipment - coolers, sinks, stoves
- Inside walk-in cooler
- Underneath handles of walk-in cooler/prep coolers

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: One of the glass sliding doors for stand up cooler missing. Currently covered with clear plastic film. Unit had ambient air temperature measured at ~10.8'C. Door on order.
Corrective Action(s): Ensure to contact the health inspector once the door is installed. Until then, do not store any cold potentially hazardous food in this unit as agreed at this time.

Routine inspection conducted:

-Handwash stations adequately supplied with liquid soap, paper towels and hot/cold running water.
-Coolers operating below required temperature of 4'C, except mentioned above; Freezer operating below required temperature of -18'C.
-Hot-holding unit operating above 60'C. Thermometers available for temperature monitoring.
-Low temperature dishwasher achieved >50ppm chlorine at the plate level after final rinse.
-200ppm chlorine solution available in buckets in kitchen and a spray bottle for the front dining area.
-Ventilation canopy hood serviced and maintained.
-No evidence of pest activity observed. Professional pest control company contracted for regular visits. No reports kept on site. Ensure to keep recent reports on site for record.
-Washroom handsinks satisfactory.

NOTE: Buffet table only in use on Sundays.
NOTE: Floors - broken tiles in kitchen to be redone in the next few months.

General sanitation of the facility requires improvement as mentioned above.

Follow-up inspection to be conducted on/after Wednesday, Sep 18, 2019. Contact the health inspector to notify once the glass sliding door cooler is repaired and operating at 4'C.
