Observation: Rodent droppings observed throughout the premises, including underneath dishwasher, underneath bar area, in utility rooms. Pest control technician on site weekly. New door sweeps have been installed on doors leading to outside. Gap still exisits in between the double back doors. No droppings observed in food preparation area. No evidence of food contamination.
Corrective Action(s): Remove all droppings and clean and sanitize affected areas. Seal gap bewtween double back doors to prevent entry of pests.

Routine Inspection

Refrigeration temperatures at or below 4 C. Thermometers available in all units, temperatures monitored and recorded daily.
Freezer temperatures satisfactory.
Hot holding (soup) temperatures were above 60 C
Dishwasher reaching greater than 71 C at plate level.
50 ppm chlorine measured at bar glass washer.
Wiping cloths immersed in 100 ppm chlorine solution.
Hand sinks stocked with liquid soap and paper towels.

Hydrogen peroxide used to clean and sanitize customer tables. Tables must be sanitized using approved sanitizer (chlorine, quats, or iodine) where the concentration can be verified (ie with test strips). Spray bottles to be refilled with 100 ppm chlorine solution. Ensure chlorine solution is changed frequently. Operator advised he will switch to quats and will use bleach until quats can be obtained.
