Observation (CORRECTED DURING INSPECTION): - Sanitizer solution is missing in front sushi bar and back kitchen
- Dirty wiping cloths are stored on kitchen counters throughout kitchen premises
- Sanitizer spray bottle with solution that was prepared few days ago is extremely dirty with dirt and grease build up
Corrective Action(s): - Fresh prepared sanitizer solution is measured at 200ppm chlorine residual. Ensure that a bucket is available at front and back kitchen area
- All wiping cloths must be stored in sanitizer solution buckets
- Clean and sanitize the sanitizer bottle and ensure that it is stored in s clean location and never on the floor

Observation (CORRECTED DURING INSPECTION): - Handwash station in kitchen is blocked with dirty utensils
- Paper towel is not available. Repeat Violation
Corrective Action(s): - Remove all dirty utensils from the basin and ensure that the handsink is available for handwashing at all times
- Replace paper towel immediatley

Observation: - Scoops are stored in bulk bins and handles are caked with food and debris buildup
- Bulk bins lids are dirty and covered in dry foods
- Raw Eggs are stored on the middle shelf inside cooler
Corrective Action(s): - Clean and sanitize all scoops and lids of bulk bins. Ensure that the scoops are stored outside the bulk bins or in a way that the handle never comes in contact with the food
- Store eggs on the bottom shelf

- Empty, straightened cardboard boxes are stored through out the kitchen in spaces between wall and equipments
Corrective Action(s): - Remove baffles of exhaust canopy and clean them, remove all grease built up
- Remove empty cardboard boxes and clean behind all equipment
- Maintain sanitary conditions through out premises

- All coolers- upright storage cooler, one prep cooler, one undercounter cooler, sushi prep coolers, sushi display cooler are measured at or below 4C
- All freezers are functional
- Hot holding units for rice and soups are greater than 60C
- No evidence of pest activity is noted at the time of inspection
- High temperature dishwasher reached 74C during final rinse at the dish surface
- Food safe certification is verified at the time of inspection
