Observation (CORRECTED DURING INSPECTION): Discussed with staff regarding the batter for fried chicken. Staff stated that they make the batter last night and store in the cooler. Take it out in the morning when the store opens. Batter only switched once throughout the day.
Corrective Action(s): Batter discarded as it has been out for more than 2hours.
Batter can only be stored at room temperature for 2hours max and must be discarded after.

Observation: 1. Two bags of flour observed stored directly on the ground.
2. The bottom shelving is sitting on the floor.
Corrective Action(s): Do not store food that is not in pest proof containers directly on the floor. Food must be stored 15cm (6in) off the ground or in pest proof containers. Please rearrange the shelving so that food is not stored on the lowest shelf.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: 1. Cooler handles and door surfaces observed to be sticky/grimy and some coated in flour.
2. Floor observed to be sticky and slippery due to the grease and gime accumulation. There are patches of sticky black grime around the perimeter of the kitchen and around the equipment and shelving.
3. Surfaces of equipment (prep cooler) and cook line observed to be coated in flour and have grease accumulation.
4. Ventilation hood observed to have grease accumulation.
Corrective Action(s): Please deep clean the kitchen and ensure flour and grease accumulation is managed. Please scrap off the black grime off the floors. Please ensure the floor is cleaned nightly with a strong degreaser.
