Observation (CORRECTED DURING INSPECTION): Vegetable slicer was found to have some dried lettuce on the blades.
Corrective Action(s): Ensure all equipment is properly cleaned and sanitized after each use to prevent potential cross contamination. Slicer was cleaned and sanitized at the time of inspection.

Comments

-Prep coolers were at 4C.
-Upright cooler was at 2C.
-Chest freezers were at -12C and -13C.
-Hot holding was greater than 60C.
-Donair meat undergoes secondary cook step and was greater than 71C (beef) and 74C (chicken).
-Frozen cone at the end of the night is shaved down to the frozen portion and the frozen portion is stored in the freezer. Chicken is shaved off the cone, cooked in the microwave, and cooled in the freezer.
-Cleaning and sanitizing carried out in the 3-compartment sink. Sink plugs and bleach available.
-Handwash stations accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels. Operator observed practicing good hand hygiene practices throughout the inspection.
-Bleach sanitizer spray bottles tested at 100ppm and labelled.
-General food storage practices good at the time of inspection. Foods stored off the ground and covered. Raw meat stored at the lowest level. Dessert items by the order area covered and protected from potential contamination.
-General sanitation good at the time of inspection.
-No signs of pests noted at the time of inspection.
-Washroom clean and well maintained.
-FoodSafe Level 1 valid until January 13, 2024.
