Observation: Mice droppings still present in the dry storage room (corners under shelving units and on floor by door). Rat traps still placed.
Corrective Action(s): Please remove droppings, clean and sanitize the affected areas with 100ppm bleach. Replace with mice traps and place baits or the traps are ineffective. If operator is unable to control pest issue, hire a professional pest control company. Level of mice activity is similar compared to last visit.

Observation: No cold water at kitchen handwashing station. Operator informed that they have been waiting for part to arrive since summer.
Correction: Hot and cold running water are required, please have the cold water tap repaired immeidately or replace the handwashing station.

Comments

Kitchen handwashing sink has been repaired so there is both hot and cold running water available.
Discussed use of ice water bath with onsite staff. Do not use bag of ice to keep potentially hazardous food cold as the bag of ice is in limited contact with food, not the entire content of food.
100ppm bleach sanitizer available.
Rice ladles stored in ice water bath.
