Observation (CORRECTED DURING INSPECTION): Potentially hazardous food stored in preparation cooler was measured at an internal temperature of approximately 6 degrees C at the time of inspection. Ambient cooler temperature: 6 to 7 degrees C.
Corrective Action(s): Temperature dial adjusted. Potentially hazardous food transferred to walk in cooler at time of inspection, with the exception of small quantities of food (to be used within two hours). Ensure potentially hazardous food is maintained at 4 degrees C or less to limit potential pathogen growth.

Observation: 1. Dough mixer and attachment observed with dried on food debris.
2. One pot and one pan had oil/debris and were stored on the clean utensil storage rack.
3. Bucket for clean utensils has an accumulation of debris. Multiple utensils have debris on them, one utensils had debris and a small piece of plastic.
Corrective Action(s): Ensure all of the above-noted equipment and utensils are properly cleaned and sanitized. Ensure equipment/utensils are maintained in sanitary condition to protect food from potential contamination. Date to be corrected by: Today.

Observation (CORRECTED DURING INSPECTION): Low temperature dishwasher had no detectable chlorine sanitizer in the rinse residual.
Corrective Action(s): Operator obtained a new container of chlorine and a chlorine sanitizer rinse residual of 50 to 100 ppm was detected and was maintained over several cycles. Chlorine test strips available. This is a repeat violation; enforcement action discussed at time of inspection.

Observation: 1. One open tin of mango pulp and one open tin of tomato sauce observed in prep cooler.
2. Dry storage food items not covered/sealed.
3. Personal items stored in close proximity to dry storage food items.
Corrective Action(s): 1. Mango pulp discarded, tomato sauce transferred to a food grade container with cover. Ensure that once tins/cans are opened, if food is to be stored it is to be immediately transferred to an appropriate food grade container with a cover. The inner lining of tins/cans may potentialy degrade over time.
2. Ensure all food is properly sealed or covered to protect from potential contamination. Date to be corrected by: Today.
3. Ensure personal items such as coats and bags are stored in a separate, designated area away from food. Date to be corrected by: Immediately.
