Observation (CORRECTED DURING INSPECTION): Cuts of BBQ Pork cooling in a large container -temperature at 40 deg C -operator indicates it has been there for about an hour after cooling
Corrective Action(s): You must be cooling food quickly.

Use your speed rack for the BBQ Pork -1 layer of 1-3" for 1-2 hours then move to the fridge:

Step 1: 60 deg C to 20 deg C within 2hours: wide-shallow pans
Step 2: 20 deg C to 4 deg C within 4 hours: transfer to the fridge

Handsinks well stocked single service drying method, soap in a dispenser, hot/cold water and clear for access
