Observation: Display cooler in the cafeteria measured approximately 8C. Foods are not stored here overnight, mainly used when the cafeteria is open.
Corrective Action(s): Have the cooler repaired until it can achieve and maintain 4C. Until then, potentially hazardous foods may only be stored in this cooler for up to 4 hours before being discarded. Do not return foods to coolers after the 4 hour period. Obtain an accurate thermometer for this cooler. Send a photocopy of the repair invoice to your area inspector.
