Walk in cooler condenser has been repaired. Temperature came down from 9C to 5C over the course of 1 hour. No product currently being held in this system. Check that this machine is 4C or below before resuming use tomorrow morning. Display cooler has been cleaned and adjusted. Measured at 2C (after defrost) Thermometer added at product level to display cooler Note: Gulab jamun are to be held at 4C or below until test results prove otherwise. (Water activity) Pest control violation (copied below) to be followed up on by Tues next week. 304 - Premises not free of pests [s. 26(a)] Observation: Rodent droppings found in storage kitchen: - Along walls (North, West, East) - In smaller storage room across from standing freezer Correction: 1) Pull out all storage racks and goods from walls 2) Make a bleach solution in a spray bottle. Use 9 parts water to 1 part bleach. Use this to spray down droppings, then wipe up while wet 3) Ensure ALL of your ingredients are sealed in bins/containers with tight fitting lids Have your 3rd party pest control company do their inspection.
