Observation (CORRECTED DURING INSPECTION): - Cooked pearls for bubble tea store at room temperature without proper time stamps.
- Two containers of cake batter stored at room temperature.
- Taro filling stored at room temperature at the time of the inspection.
Corrective Action(s): - Immediately begin time stamps for cooked pearls stored at room temperature. Maximum allowable time is 4 hours.
- Store all cake batter and taro filling inside the cooler at < or = 4C.

Observation (CORRECTED DURING INSPECTION): Staff using Lysol wipes for sanitizing food contact surfaces (ie work tables, prep tables). No surface sanitizer available at the time of the inspection.
Corrective Action(s): Immediately prepare surface sanitizer (ie bleach solution) to sanitize food contact surfaces.
- 1:500 dilution of bleach
- 5ml bleach with 2.5 L water
- 1 tsp bleach with 10 cups water

Comments

- General sanitation is satisfactory.
- All handwash sinks (front/back) equipped with hot/cold running water, liquid hand soap and single-use hand towels in dispensers.
- High temperature dishwasher achieved 72.9C at the plate's level during the final rinse cycle at the plate's level.
- Two compartment sink available for warewashing (front of the kitchen).
- Dry storage area has adequate space and wire racks.
- No signs of pest activity at the time of the inspection. The operator implements own pest control system (ie physical traps).
- FOODSAFE trained staff on duty. Verified at the time of the inspection.
- Operating Permit posted in a conspicuous area. Ensure to post a valid decal once arrived in the mail.
- Washrooms appear to be in clean condition.

Temperature control:
- All coolers at < or = 4C
- Freezer = -18C
- Thermometers available in all refrigeration units.
- Working thermometer inside the undercounter cooler (front).
