Observation: Cardboard was placed on the floor under the deep fryer.
Corrective Action(s): Discontinue the practice of lining surfaces with cardboard. All surfaces must be smooth, non-absorbent, and easily cleanable.

Comments

-Walk-in cooler was at 4C.
-Prep cooler was at 2C (top and bottom).
-Under counter freezer was at -9C.
-Upright freezer was at -18C.
-Hot holding of donair meat was greater than 60C. Meat undergoes a secondary cook step after it is shaved from the cone.
-Chicken stored at less than 60C is time tracked. After 2 hours, the product is discarded.
-Gravy was reheated to greater than 74C.
-Chemical dishwasher had a final rinse of 50ppm chlorine on the dish surface during the final rinse (minimum of 50ppm required for proper sanitizing). Operator has chlorine test strips to verify the chlorine concentration.
-Handwash station accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Bleach sanitizer spray bottle labelled and tested at 100ppm.
-Blender containers sanitized after each use.
-General food storage practices good at the time of inspection. Foods stored off the ground and protected from potential contamination. Raw meats stored below and separately from ready-to-eat foods.
-Scoops were stored in a sanitary manner.
-General sanitation good at the time of inspection.
-No signs of pests noted at the time of inspection. Ensure facility is maintained in a clean and sanitary condition and all potential entry points are sealed to prevent further pest issues.
-Washroom clean and sanitary. Handwash station supplied with liquid hand soap and single use paper towels.
-FOODSAFE Level 1 valid until August 11, 2023.
