Follow up to Rpt # MBEK-B58VRT

- Quaternary ammonium compounds (quats) sanitizer measured at 200 ppm in spray bottles and from dispensing unit. It was stated that dispensing unit was serviced. Note: One spray bottle located in the back preparation area is not labeled; ensure bottle is properly labeled to identify contents.
- In use utensils were not observed to be stored in sanitizer. A hot water bath was available for storage of these utensils.
- Deli slicer in use at time of inspection. Deli slicer to be properly taken apart, cleaned, rinsed, and sanitized after use. Ensure hard-to-reach areas are thoroughly cleaned.
- Hot holding internal temperatures satisfactory
Note: Reminder to ensure that any potentially hazardous foods stored on ice are fully submerged in ice to maintain temperatures of 4 degrees C or less.
