Comments

-Time tracking was not being done for the food on the prep. table. Food Safety Plan not in use. All coolers were < 4 C. All freezers were < -18 C. Quats sanitizer was at 200 ppm. Dishwasher final sanitizing rinse reached 71 C at the plate level. No evidence of pests. Hand sinks supplied with hot and cold water, soap and paper towels. General sanitation was satisfactory.
