Handsink is no longer plugged and able to drain properly. Exhaust hood properly cleaned (next service is Nov 2019). Mice droppings reduced; hole downstairs has been sealed. Operator (chef) just took Foodsafe Level 1 (info obtained to verify later); operator's wife will be taking the class later as well. No further concerns.
