Observation (CORRECTED DURING INSPECTION): Food debris observed under the blade guard of the deli slicer and on the supporting arm of the dough mixer.
Corrective Action(s): Clean and sanitize the aforementioned equipment. Ensure all food equipment is cleaned and sanitized properly after each use. Correct by: immediately.

Observation (CORRECTED DURING INSPECTION): Sanitizer spray bottle at the server area measured with 50 ppm quaternary ammonium. 200 ppm is required to properly sanitizing food contact surfaces.
Corrective Action(s): Staff discarded and refill the bottle with 200 ppm quaternary ammonium sanitizer.

Observation (CORRECTED DURING INSPECTION): Front hallway hand washing station was blocked by a water jug. The jug was left inside the sink.
Corrective Action(s): Do not store any utensils and containers inside the hand washing station. The jug was removed.

Observation (CORRECTED DURING INSPECTION): Bottles of chemicals were stored beside syrup sauce on the front hallway shelf.
Corrective Action(s): Move the chemicals back into the chemical room. Do not store any food and chemical beside each other to prevent potential contamination.

Comments

Routine inspection:
- Coolers (2 walk-ins, prep, under the counter, beer) maintained at 4C or less.
- Freezers (walk-in, under the counter) maintained at -18C or less.
- Hot food hot held above 60C.
- Hand washing stations provided with hot/cold running water, liquid soap and single use paper towels.
- 100 ppm bleach sanitizer available in pail.
- High temperature dishwasher registered 71C at the plate level after 3 runs. 71C is the minimal required final rinse temperature. Recommend to have a technician check up on the dishwasher.
- Glass washer dispensed 12.5 ppm iodine at the plate level.
- Ice machine maintained in a sanitary condition.
- Food stored off the ground.
- No pest activities observed at the time of inspection.
- Discussed the cooling procedure of large portion of meat with operator. The meat should be cooled inside the walk-in freezer first to meet the temperature and time requirement.
- Bottles labeled "vinegar with water" observed on site. Reminder that vinegar is not a food grade sanitizer and does not have the ability to sanitize food contact surfaces properly.
