Monitoring logs being maintained Screen installed in kitchen window Reminder to always use metal containers when cooling hot items such as soup. Use ice water bath to assist in cooling. PHF's must cool from 60c to 4c within 6 hours. Dishwasher at approx. 70ppm chlorine in final rinse. Soap dispensed into wash cycle. Walk in cooler at <4c Freezers cold holding at <-18c. No pest problems noted Hot and cold water supplied at hand sink.
