Observation (CORRECTED DURING INSPECTION): 0 ppm QUATS sanitizer was available in a spray botlte labelled as "QUATS sanitizer D10", in the bucket with a wiping cloth, and from the dispenser. 0 ppm chlorine sanitizer was measured from this spray bottle and bucket as well.
Corrective Action(s): Manager setup 100 ppm chlorine sanitizer during the inspection in the bucket with a wiping cloth [Corrected].

If you wish to continue using the QUATS sanitizer, then adjust/repair the dispenser so that it is at 200 ppm and contact the district Environmental Health Officer for a follow up inspection [this is still outstanding]

Observation (CORRECTED DURING INSPECTION): 1) Two handsinks contained preparation utensils and food equipment inside them at the time of inspection.
2) Handsink near the bar area lacked liquid soap and paper towels.
Corrective Action(s): 1) Preparation utensils and equipment were removed from the handsinks. Ensure the handsinks are kept free of preparation utensils/equipment to keep them accessible for handwashing only and to protect food equipment/utensils from contamination. Rewash and sanitize the preparation utensils.
2) Handsinks in the bar area was restocked with liquid soap and paper towels.

Observation (CORRECTED DURING INSPECTION): Three fly strips with flies on them were observed hanging over the dishwashing area and above the handsink near the prep. cooler.
Corrective Action(s): Fly traps were removed from the above noted areas.

Observation (CORRECTED DURING INSPECTION): 100 ppm chlorine sanitizer was available in a spray bottle however the spray bottle was not labelled to identify the contents.
Corrective Action(s): Chlorine sanitizer spray bottle was properly labelled during the inspection.

Comments

Other handsinks were supplied with liquid soap, hot and cold running water, and paper towels.
Coolers were at or below 4 degrees C and were equipped with thermometers.
Freezers were at or below -18 degrees C.
Hot-held food was at or above 60 degrees C.
Food storage in the walk-in-cooler was satisfactory as raw meat was being stored on the lowest shelf to prevent raw meat juices from dripping onto ready-to-eat food.
Dishwasher final rinse sanitizer was at least 50 ppm at the plate.
100 ppm chlorine sanitizer was available in a bucket with a wiping cloth near the prep. line and in a spray bottle.
No signs of recent pest activity were present at the time of inspection.
Ventilation hood and ice machine were in a clean condition.
Dipper well was turned on.
