Observation (CORRECTED DURING INSPECTION): Sanitizer measures 0ppm Quats from dispenser.
Operator has prepared and finished baking chicken wings.
Bleach is available.
Cutting boards for prep line (on top of line coolers) have dark cuts and staining.
Corrective Action(s): Made bleach with operator during the inspection and soaked cloth inside.
Ensure that more chemical supply for Quats is ordered or use and order bleach if it is more readily available.
Wash and scrub down cutting boards with bleach and water.

Observation: Dishwasher chlorine level between 10-50ppm (around 25ppm).
Bleach is available for sanitizing dishes in 2 compartment sink.
Corrective Action(s): Use dishwasher to clean and wash the dishes.
Sanitize in 2 compartment sink after cleaning in dishwasher with bleach sanitizer. Ensure that bleach is between 50-100ppm. 100ppm is recommended for soaking in sink.

o Hot holding food items are at 60C - soups, gravy, au jus.
