Corrective Action(s): Ensure sanitizer is maintained at 100 ppm chlorine with wiping cloths stored in solution. Do no leave wiping cloths on counter.

Observation: Mouse dropping noted under the hand sink, on floor between shelving units and some beside back door.
Corrective Action(s): Ensure premise is free of pests. Add additional pest control devices and get professional pest control company contract if pest activity increases.

2. Wooden chop block has deep groves in it.
Corrective Action(s): All materials in kitchen must be smooth, durable, non-absorbent and easy to clean.
1.Cardboard does not meet this requirement. Remove all cardboard from lining shelves or used to absorb liquids.
Correction date: 1 day
2.Wooden chop block does not meet the above requirements and must be replaced. New cutting board can be placed on top that will meet above requirements.
