Observation (CORRECTED DURING INSPECTION): Altosham # 1 (chicken): Internal temperature of the chicken was @ 53oC. Hot holding of food must be @ 60oC or above
Corrective Action(s): Reviewed cooking process and hot holding process. The store monitors the temperature of the hot holding units 2 times a day.
Ensure to cook chickens upto 74oC for at least 15 seconds then transfer to a hot holding unit @ 60oC or above immediately.
Call a technician to check the altosham #1. Use other altosham units until #1 is repaired.
