Observation: Wooden board placed on top of the main prep counter for dumpling production. Discussed about having the board resurfaces/coated so that the surface is food grade, smooth, non-porous and easily cleanable.
Corrective Action(s): Operator will have it removed and use the original stainless countertop. OK.

Comments

Routine inspection conducted:

- Handwashing stations adequately supplied with liquid soap, paper towels and hot/cold running water.
- Coolers operating at/below 4'C; Freezers operating at -18'C.
- Thermometers available for temperature monitoring.
- High temperature dishwasher achieved 74.3'C at the place level after final rinse.
- 200ppm chlorine available in a bucket for wiping rags.
- Scoops stored in proper manner.
- No evidence of pest activity observed.

General sanitation level satisfactory but could be improved by cleaning hard to reach areas on a more regular basis (i.e. storage shelf under cooking equipment, floors underneath/behind large kitchen equipment).
