Observation (CORRECTED DURING INSPECTION): 1. Knives were not washed and sanitized between use. Dirty knives observed hanging on rack with food stains on it.
2. Kitchen sanitizer for counters was not available at the time of inspection.
Corrective Action(s): 1. All used utensils and equipment need to be properly washed and sanitized per use. Only put clean equipment and knives in storage after it has been washed and sanitized.
2. Ensure sanitizer is available in kitchen for food contact surfaces. 400 ppm quat sanitizer was made by operator.

Observation (CORRECTED DURING INSPECTION): Sealed food product was being placed in hand sink next to dish washer.
Corrective Action(s): Ensure all hand sinks are not obstructed to allow for hand washing. Ensure all hand sinks have liquid soap and paper towels with hot and cold running water at all times.

Observation: Some spills and open lids observed on food containers in storage. Bags of onions and flour stored directly on the ground. Organization and cleaning required.
Corrective Action(s): Ensure food is stored at least 15 cm off the ground or on shelving. Maintain clean covers and lids for food storage. Clean spilt items and make sure scoops stay clean as well. Correction required in 3 days.

Observation: Front bar hand sink is currently being repaired. Bar not in use. Staff wash hands in kitchen sink 4 feet away. Operator indicates plumber will be back later this month to provide repair.

No signs of pests at the time of inspection.

Washrooms are sanitary with fully stocked hand sinks.
3-compartment sink in use. Quat sanitizer in use at 400 ppm.
Dishwasher final rinse at 71C at the plate. Ensure to turn this unit on to allow booster to reach required temperature before using.
After correction sanitizer in use in buckets.
Valid Permit posted in conspicuous location.
