Observation: Wall behind hand sink in kitchen is worn with exposed dry wall. Shelves for dry storage require cleaning. Wooden prep table with stainless steel top - wooden base requires re-surfacing.
Corrective Action(s): Walls, shelves, wooden surfaces, etc. are to be smooth and impermeable to moisture so that they can be kept clean - correct by April 1, 2020 (operator can call with an update). Walls should be light in colour. Clean kitchen in hard to reach areas.

Operator is available on site daily and previously updated Food Safe.
If operator is absent, at least one person per shift is to have a valid (less than 5 years old) Food Safe certificate.
Food Safety Plan - information provided. Provide written food safety plan for wings as previously requested. Keep copies of your food safety plan on site - see above.
Today, reviewed lasagna preparation - made and cooked to order.
Coolers - line cooler <4 C. Upper inserts - lid is down. Do not overstock.
Pop/salad cooler is at 4 C. Walk in cooler - food temperature was at <4 C. This may be on defrost so check again in 1 hour.
Hot holding pizza - bottom pizza is at >60C. Middle pizza 57 C. Adjusted (increased) temperature of hot holding - keep food at 60 C or hotter.
***Paper towels are available at kitchen hand sink. Provide a dispenser for the paper towels. Hot /cold water and liquid soap are provided.
Quats sanitizer is used on work surfaces every 4 hours. 200ppm quats detected - good.
Dishwasher has a final hot water sanitizing rinse - test strip changed colour. Temperature gauge showed 85 C.
Wall/ wooden surfaces - see above.
Customer washroom- has hot/cold water, liquid soap, and hand dryer.
Future - repair broken tiles on kitchen floor.
