Observation (CORRECTED DURING INSPECTION): Pork belly cut meats observed sitting on counter in large container -temperature was 24 deg C -pork belly was cooke over 3 hours ago
Corrective Action(s): Discard pork belly.

Cool foods quickly:

Step 1:
60 deg C to 20 deg C within 2 hours: if you are using wide shallow pans method -the thickness of the layer should not exceed 2-3 inches

Step 2
20 deg C to 4 deg C within 4 hours in the fridge

NOTE: operator should be using the wide shallow pans in the speed rack for this

Fill out the cooling chart for the next few batches to ensure you are meeting the above temperature gradient -submit the chart to me for the follow-up inspection

-corner next to the stoves
-dry storage room on every shelf
-under dough mixer and flour bag shelf

-Reviewed the Manual Wash Method with the operator: wash-rinse-sanitize with bleach then air dry as per the sign posted there
-Bleach sanitizer spray >100ppm chlorine residual -cloth wiping towels are single use only

Daily tracking sheets maintained for fridges, hot holders and mechanical washer

General Sanitation

-all goods maintained off the floor >15cm to facilitate cleaning and monitoring pests underneath
-no signs of pests

Handsinks well stocked single service drying method, soap in a dispenser, hot/cold water and clear for access
