Observation (CORRECTED DURING INSPECTION): 1. Seafood department and cake area for the bakery department did not have sanitizer available for use. 2. High temperature dishwasher for the bulk food area registered 68C at the plate level.
Corrective Action(s): 1. Fill the 200 ppm quaternary ammnoium sanitizer from the dispenser into spray bottles or pails. Sanitizer must be availalbe on site at all time during operation. 2. utensils cleaned and sanitized by the aforementioned dishwasher must be redirect to other functional dishwashers at other departments or alternatively, manually sanitize these utensils. Do Not use this dishwasher until it is able to sanitize utensils properly.

Observation (CORRECTED DURING INSPECTION): Hand washing station for the bakery section was obstructed by a rolling cart with cardboard boxes stored on it.
Corrective Action(s): Move the rolling cart to a different area. Hand washing station must not be obstructed to ensure proper hand hygiene.

Observation: High temperature dishwasher for the bulk food area registered 68C at the plate level.
Corrective Action(s): Service / fix the aforementioned dishwasher to ensure at least 71C is registered at the plate level during the final rinse cycle. Correct by: May 3, 2019.

- Hand washing station equipped with hot/cold running water, liquid soap and single use paper towels.
- Walk-in cooler maintained at 4-5 degrees Celsius. walk-in cooler door was left open and unattended.
- QUAT sanitizer in spray bottle measure at 200 ppm.

Seafood Department:
- Fish display coolers and walk-in cooler maintained below 4 degrees Celsius.
- Ice machine for fish display cooler maintained in a sanitary condition.

Meat Department:
- Hand washing station fully equipped with liquid soap, paper towels and hot/cold running water.
- Cutting room temperature satisfactory.
- All coolers and walk-in cooler maintained below 4 degrees Celsius.

- General maintenance and sanitation satisfactory.

- Dairy walk-in cooler maintained below 4 degrees Celsius.

- All food items are organized on shelves and display units.
- Bulk food items have separate scoops that are stored in a sanitary manner.
