Observation (CORRECTED DURING INSPECTION): Surface sanitizer had 0 ppm Chlorine sanitizer in bucket.
Corrective Action(s): The operator added one capful of chlorine into sanitizer bucket. Now at 100 ppm chlorine.

Observation: The operator continues to place large garbage bin in front of the handwashing station that restricts access to handwashing station.

Observation: Large portion of frozen fish was being thawed directly in sink under warm water.
Corrective Action(s): Thaw frozen fish in a container (not directly inside sink) under:
1) Cold running water until thawed or

3) In ice bath.

Observation: Noted build-up of dirt, food debris, and grease in the following areas:
- underneath three compartment sink
- underneath handwashing sink
- in and around grill and fryer
- in and around coolers and freezer

Corrective Action(s): Clean the areas noted above and implement a stricter cleaning schedule as part of your sanitation plan. Date to be corrected: Today and ongoing.
