Observation: Dried food debris observed on the vegetable presser.
Corrective Action(s): Clean and sanitize the vegetable presser. Follow proper procedures to take the presser apart. Presser must be cleaned and sanitized every 4 hours. Correct by: Immediately.

Observation (CORRECTED DURING INSPECTION): Sanitizing bucket measured with 50-100 ppm quats solution. 200 ppm is required to properly sanitize utenils and food contact surfaces.
Corrective Action(s): Staff dicarded and refilled the bucket with 200 ppm quats sanitizer.

Observation: Cold water faucet for the back kitchen hand washing station was turned off. Staff stated cold water faucet is leaking.
Corrective Action(s): Fix the leaking to ensure hot / cold running water is provided at this hand washing station. Correct by: Jul 24, 2020.

Observation: Digital thermometer used for the walk-in cooler did not display an accurate number.
Corrective Action(s): Obtain an accurate thermometer for the walk-in cooler to ensure temperature can be monitored. Correct by: today.

Comments

Routine inspection:
- Coolers (walk-in, sandwich) maintained at 4C or less.
- Beverage cooler at 6C. Only non-potentially hazardous food stored inside.
- Chest freezer at -18C.
- Hot potentially hazardous food hot held at above 60C.
- Front hand washing stations provided with hot/cold running water, liquid soap and single use paper towels.
- 200 ppm quaternary ammonium available from the dispenser and in the 2 compartment sink.
- High temperature dishwasher not in use. Manual warewashing set up at the 2 compartment sink.
- Temperature logs maintained and available for review.
- General sanitation satisfactory.
- No pest activities observed.

The following must be corrected by the operator before the next inspection:
- Indicate the maximum number of people allow in the facility on the Covid19 Safety Plan.
- Add a hand washing or hand sanitizer at the self serving fountain drink. Signage must be posted to remain public of hand hygiene before using the fountain.
