Observation: Floors underneath/behind the main cooking equipment, and undercounter shelves (bottom) require more frequent cleaning as discussed at this time.
Corrective Action(s): Ensure to have the areas cleaned on a more regular basis. Sanitation level of other areas had improved.

Comments

Routine inspection conducted:

- Handwashing stations adequately supplied with liquid soap, paper towels and hot/cold running water.
- Coolers operating at/below 4'C; Freezers operating at -18'C.
- Hot-holding units operating above 60'C.
- 200ppm chlorine solution available in labelled spray bottles and in buckets.
- High temperature dishwasher achieved 71.3'C at the plate level after final rinse.
- Glasswasher achieved the minimum required concentration of chlorine (>50ppm) after final rinse.
- Ice machine satisfactory. Scoop stored in proper manner. Front Bar satisfactory.
- Fish tanks maintained/cleaned x3/month, major cleaning every month. OK.

NOTE: Wooden shelves by the fish tanks require refinishing as discussed at this time.
NOTE: Ensure all staff are properly trained regarding the use of the sanitizer solution. Handwashing sink MUST be used for handwashing purposes ONLY.
