Observation (CORRECTED DURING INSPECTION): Defrosted fish was found in sink to have an internal temperature of 23C. (See violation code 211)
Corrective Action(s): All fish in sink was discarded at time of inspection. Cold food must be kept at 4C or colder at all times.

210 - Food not thawed in an acceptable manner [s. 14(2)]
Observation (CORRECTED DURING INSPECTION): Fish was found already thawed out in sink. Staff stated the frozen fish was defrosted with warm water. Internal temperature of fish was 23C.
Corrective Action(s): All fish in sink discarded at time of inspection. Defrost frozen food the following acceptable ways:
- Under cold running water below 4C
- In the refrigerator overnight
- In the microwave as part of the cooking process

*Do not defrost food in warm water or out at room temperature!

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: Sliding glass door cooler was leaking. Ambient temperature of cooler was still below 4C (good).
Corrective Action(s): Staff has called repair technician for servicing of cooler. Ensure this cooler is no longer leaking and is capable of maintaining temperatures at 4C or colder at all times.
Mop up the pooled water in the meantime.

Comments

- Hand sink was easily accessible (garbage can has been relocated to hot water tank area)
- Floors in kitchen were clean; no food debris or grease accumulation observed at time of inspection. **Ensure to keep floors clean! Especially under equipment and in hard to reach corners (i.e. under prep table, under dishwashing and hand sink area, and area around hot water tank and garbage can)
- No new rodent droppings were seen at time of inspection **Continue monitoring for activity daily.
- Rodent snap traps were empty upon inspection
- Area out back has been cleaned and bait stations have been placed. **Ensure to keep this area clean and free of garbage and debris at all times!
- Hand sink in washroom has been fixed - no longer leaking
- Newspaper and cardboard no longer being used to line floors or shelves - good.
- Rubber mat is now being used to line floors under dishwashing area
- Front and back door were kept closed - good
