Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation: 1. Biofilm observed on some interior surfaces of ice machine.
2. Residue observed on blade of stored deli slicer.
Correction: 1. Discard ice. Ensure interior surfaces of ice machine are properly cleaned, rinsed, and sanitized. Allow to dry completely before preparing new ice. Ensure ice machine interior is cleaned and sanitized regularly, at a frequency needed to limit biofilm growth and protect ice from potential contamination. Date to be corrected by: Today.
2. Deli slicer was removed from storage to be disassembled, washed, rinsed, and sanitized during inspection. Ensure deli slicer is properly washed, rinsed, and sanitized following each use to prevent potential cross contamination.
Comments

Follow up to report MBEK-CHEPDZ.
- Small cooler located to the left of the cook line measured at an ambient temperature of approximately 1 degree C or less (required: 4 degrees C or less). No food product storage.
- Ice machine interior and deli slicer have been cleaned and sanitized.
- Sanitizer in spray bottles was tested at 200 ppm quats. Spray bottles are labeled.
- Areas affected by droppings noted on last report have been cleaned and sanitized.
- Back door observed to be closed. Operator stated that a screen door will be installed.
- Cook line (including floors and ventilation canopy) and kitchen shelves observed to be in clean condition.
- Thermometers (probe and cold holding unit thermometers) received in shipment during inspection. Ensure thermometers are placed within cold holding units to monitor temperatures.
- Shellfish tag system implemented. Reminder to retain tags for a minimum of 90 days.
