-Upright kitchen cooler's at 3 degC; drink cooler's at 4 degC; hotholding is above 60 degC
-Upright cooler in the back storage area is at1 degC; back room chest freezer is at -19 degC
-Front service prep cooler was at 2 degC
-200ppm Quats is in a spray bottle on-site; 3-comp. dishwashing method used for washing dishes. Third sink has 200ppm chlorine in it.
-Temperature logs are being maintained. ENSURE YOU ADD THE NEW WARMER UNITS TO THE LOG.

REVISE THE MENU AND FSP ONCE YOU ADD THE APPETIZERS AND DESSERTS AS WE DISCUSSED.
