Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: REPEAT VIOLATION:
4 spray bottles on site that are allegedly for use as sanitizer sprays. One (with original cleaning label) was found with >200ppm bleach, while the other 3 either had no detectable bleach, or far greater than 200ppm. None of these bottles was correctly labeled.
Bottles are also much too small for practical use on band saw, meat grinder, and prep tables.
Correction: 1) Properly dilute your bleach using 5ml for every 1 litre of water
2) Get better spray bottles
3) Label all bottles

Meat department:
2 compartment sink supplied with liquid soap, paper towels, hot/cold running water
Bleach sanitizer found on site in rag bucket and spray bottle - containers labeled for use
Discussed regular cleaning schedules of band saw and grinder with employees on site - machines allegedly cleaned and sanitized every 4 hours, or 3x daily
Walk in cooler 4C
Small chest freezers ranged from -23C to -27C. Some of these machines require a defrost and cleaning
Large chest freezers ranged from -6C to -11C
Walk in freezer -12C
**Walk in freezer requires cleaning and organizing

As discussed, putting small dry goods in bins will assist in routine cleaning
