Observation: Food debris and grease found along the floor behind/beneath the cook station, and beneath the assembly cooler. This will attract pest.
Corrective Action(s): Clean these areas eveyday by moving equipment away from walls to access the floor beneath it. And/or, ensure staff have mops that reach to the back wall beneath the cook station.

307 - Equipment/utensils/food contact surfaces are not of suitable design/material [s. 16; s. 19]
Observation: Raw wood shelf, above the grease trap, is not sealed. Food will absorb into the wood and it is not cleanable, this will attract pests.
Corrective Action(s): Paint all the surfaces (top, bottom & sides) with a light color.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: 1) The light fixture above the dishwasher is broken and the light level is low. It is dark and it's difficult to clean properly. This will attract pests.
2) The black, double door cooler doors do not close tightly. There are openings that allow cold air to constantly escape. In hotter weather, food will not be able to be maintained at 4C or colder.
Corrective Action(s): 1) Repair or replace the light fixture so it works, and the light level is increased.

2) Repair or replace the cooler doors and/or the door gaskets so the doors close tightly. If the unit is too old and parts can't be found, replace the whole unit with a new/used one, which can maintain food below 4C at all times.

Comments

A routine inspection completed:
- Coolers 4C or colder; freezers -17C or colder; hot holding unit above 60C; and thermometers present.
- Low temp dishwasher had [Cl2] between 50-100ppm during the rinse cycle. Test strips present and used daily.
- Cloth buckets had [Cl2] of 100ppm. Increase the amount of bleach added (1 tsp of bleach to 1L of water), and change the solution every 2 hours.
- Hand sink stocked with liquid soap, paper towels, and running hot and cold water.
- All foods stored in food grade containers; covered; foods stored in groups with raw proteins stored below RTE foods; and foods stored 6" off the floor on shelves or platforms.
- No expired foods in use or for sale. FIFO rules being followed.
- General sanitation has improved, good work. Ensure to addressed the mentioned areas.
- Owner to purchase more commercial grade degreaser for the floor and food contact surfaces. Ensure the product is safe to use in kitchens and on food surfaces (read the instructions).
- Exhaust canopy was clean, next professional cleaning due in February 2023 as per service sticker.
- No signs of pests. A monthly monitoring contract with a professional company in place. Ensure to keep all doors closed between dusk and dawn, OR install a screen on the doors to exclude flies and rodents.
- Valid, FoodSafe certified staff present.
