Observation (CORRECTED DURING INSPECTION): No paper towels available at 2 hand washing stations. Soap dispenser (at handsink) not installed onto the wall. Ensure that handsinks are fully socked with paper towels (in addition to soap and warm water). Install soap dispenser onto the wall. Date to be corrected by 2016/06/20.

Comments

All refrigeration units' (walk-in cooler, display unit, under counter fridge) temperatures are less than 4C.
All freezer temperatures are less than -18C.
Sanitizer solution (chlorine) is available in spray bottles with a concentration of 200 ppm. Note: Maintain sanitizer solution (eg. chlorine) at a minimum concentration of 100 ppm. Test strips were provided.
Manual dishwashing used. Bleach/chlorine is available.
Hand sinks (see above note).
Foods stored off the ground and protected from contamination. Foods from approved sources.
Chemical stored away from foods.
Ice machine and one undercounter refrigeration unit not in use.
Cutting boards washed and sanitized every hour. Meat slicer cleaned and sanitized every 2 hours.
Food Safe trained staff on-site.
Overall sanitation of premises is OK. Continue with routine cleaning.
Note: discussed about using a bucket filled with sanitizer solution (bleach) at a concentration of 100 ppm for soaking wiping cloths.
