Corrective Action(s): Drain the ice prior to cleaning and sanitizing the ice machine in accordance with manufacturer's specifications; Correct today.

Observation (CORRECTED DURING INSPECTION): Handwashing station near the cook line was obstructed at the time of inspection.
Corrective Action(s): Ensure the handwashing station near the cook line remains accessible for handwashing purposes during all hours of operation. Staff removed preparation utensils from this handwashing station during the inspection.

Observation (CORRECTED DURING INSPECTION): Sieve with loose metal wiring was observed in the 2-compartment sink.
Corrective Action(s): Staff member discarded the above-noted sieve during the inspection to protect food from any potential physical contamination. Ensure all equipment is maintained in good working order.

304 - Premises not free of pests [s. 26(a)]
Observation: Dead cockroaches were observed inside two traps on the floor corner between the walk-in-cooler and wall cooler. One dead cockroach was observed on the floor near the dishwasher.
Corrective Action(s): Pest control program is in place on a biweekly basis (every second Tuesday) according to staff. Pest control reports are emailed to the Operator according to staff. Provide a copy of your most recent pest control reports to the Environmental Health Officer during the follow up inspection.

Monitor for pest activity and continue the professional pest control program to re-service traps and apply appropriate treatment to eliminate cockroaches. Remove the dead cockroaches; Correct today. Thoroughly clean the following areas near the dishwasher: floor space between and behind refrigeration units, side of the 2-compartment sink, and dry storage surfaces; Correct within 2 days. Seal any potential entry points.

Handsinks in the front service area and customer washrooms were supplied with liquid soap, hot and cold running water, and single-use paper towels.
Walk-in-cooler, wall cooler, prep. cooler, and bar cooler were at or below 4 degrees C.
Three chest freezers were at or below -18 degrees C.
Refrigeration units were equipped with thermometers.
Hot-held stews and rice were at or above 60 degrees C.
Dry food ingredients were stored in pest proof containers with tight fitting lids.
Dishwasher final rinse temperature was at least 71 degrees C (measured at 72 degrees C) at the plate level.
2-compartment ware-washing sink was supplied with hot and cold running water.
100-200 ppm chlorine sanitizer was available inside the labelled spray bottles.
Ventilation hood panels appeared clean.
