Observation: It was observed sushi chefs are removing the sushi display doors for fish prepping
Corrective Action(s): Do not remove the fridge doors of ANY unit it will not maintain cool temperatures -fish temperatures measured at 4-7 deg C with the doors off. With the doors on temperatures are 3-4 deg C

Observation (CORRECTED DURING INSPECTION): Dishwash handsink had no dispensed soap at time of inspection and a cart was obstructing it's use.
Upstairs employee washroom has bare paper towel only.
Corrective Action(s): Handsinks must be adequately stocked all the time: pumped soap, dispensed paper towels, hot/cold water and clear for use

Place the cart somewhere else
Place the bare paper towel roll INSIDE of the dispenser otherwise the ends will get contaminated when handled
