Observation (CORRECTED DURING INSPECTION): Spray bottle of bleach was filled with pure bleach for sanitizing food contact surfaces.
Corrective Action(s): Pure bleach at 52,500ppm (5.25% bleach) is not considered food grade. Bleach at 100ppm to 200ppm is required as a food grade sanitizer. To prepare 100ppm to 200ppm bleach add 5mL of bleach per liter of water. 200ppm bleach was prepared at the time of inspection.

Observation (CORRECTED DURING INSPECTION): Facility has not removed single use corrugated plastic trays. Trays were found to have food stuck between the corrugated sections. Staff stated plastic is used as a barrier to prevent food from falling.
Corrective Action(s): This is a continuing violation. Remove all corrugated plastic board from the facility. Plastic cannot be properly cleaned and sanitized after each use and may potentially contaminate foods. Items were discarded at the time of inspection.

Comments

-Follow-up inspection to November 10, 2017.
-No potentially hazardous foods were stored in the hot hold unit at the time of inspection. Hot samosas were stored in the hot holding unit last week, and time tracking records were maintained for that time period.
-Handwash station single use paper towel dispenser has been mounted on the wall at the handwash station.
-Chemical spray bottles were properly labelled at the time of inspection.
