Observation (CORRECTED DURING INSPECTION): 0 ppm chlorine sanitizer was available in the bucket that contained water. The bucket was also placed below a package of cans that was placed below a large pot.
Corrective Action(s): 1. Staff setup 100 ppm chlorine sanitizer at the time of inspection. Ensure 100 ppm chlorine sanitizer is available at all times to sanitize food contact surfaces; Change the bleach water frequently throughout the day (e.g. morning, lunch, and evening time) to maintain 100 ppm chlorine sanitizer.
2. Ensure the bleach water is easily accessible for use and is stored away from food storage areas. The bleach water was re-located on the floor near the 2-compartment sink.

Observation (CORRECTED DURING INSPECTION): 1. Packaged raw meat was stored above a prepackaged bag of frozen fruit. The raw meat is for personal use and is not prepared or served on-site.
2. Two sliced watermelon halves were uncovered in the upright cooler. A bag of dry sugar was uncovered in the kitchen.
Corrective Action(s): 1. Ensure meat is stored at the lowest shelf of the upright freezer and ready to eat food (i.e. food that will not be cooked) is stored above it to prevent raw meat juices with potentially harmful bacteria from contaminating the ready to eat food.
2. Operator covered the watermelon with saran wrap (Corrected).

Obtain a large enough food grade container with a tight fitting lid for the sugar; CORRECT BY TOMORROW.

Comments

Both handsinks were supplied with liquid soap, hot and cold running water, and paper towels.
Prep. cooler was at 2.7 degrees C (at or below 4 degrees C).
Upright cooler was at 3.3 degrees C (at or below 4 degrees C).
Freezer was at or below -18 degrees C.
Coolers were equipped with thermometers.
Drain plug was available for the 2-compartment sink. Dishwashing was not occurring at the time of inspection.
It was reviewed that all food containers/utensils are properly washed and rinsed in the first compartment and sanitized in 100 ppm chlorine sanitizer for at least 10 seconds in the second compartment before they are air dried.
FOODSAFE trained staff member was available on-site.
*It was discussed that FOODSAFE certificates issued prior to July 29, 2013 will expire July 29, 2018. The operator and at least one staff member in the absence of the operator on-site must maintain valid FOODSAFE training via completing the FOODSAFE Level 1 course or FOODSAFE Level 1 refresher course. Refer to www.FOODSAFE.ca for details.

A follow up inspection will be conducted next week to check that sanitizer is setup appropriately and the open bag of dry sugar is stored in a FOOD GRADE pest proof container with a tight fitting lid.
