Internal and surface temperatures >4C.
Thermometer inside cooler shows 60F. Digital thermometer on outside shows 49F.
Items have been inside cooler for about 1hr.
Corrective Action(s): Monitor temperature for the next 30min, if temperature does not go down, discard or use up by cooking, all times in this cooler.
Transfer items to working cooler now.

Hand wash station supplied with hot and cold running water, liquid soap and paper towels in dispenser.
Some storage of clean containers inside hand sink, operator removed without mentioning, thank you.
Ensure that hand sink is always clean and available for hand washing.
Line cooler 1 <4C.
Upright cooler, some items are above 4C, as operator was using these items during cooking. Older items in cooler are close to 4C. Continue to monitor and move to working cooler.
Operator has both digital monitor on the cooler and thermometers inside the cooler, thank you.
Operator mentioned he monitors temperature every morning. Afternoon temperature of coolers also needs to be monitored.

Kitchen floors cleanliness has improved and is free of grease.
Keep up with cleaning hard to reach areas and behind equipment.
Dishwasher >71C (75.0C) max rinse temperature.
Bleach sanitizer in spray bottle kept in kitchen next to food prep, thank you. >100ppm Chlorine (200ppm).
Soups are kept in coolers for cooling, small containers, thank you.
No signs of pests at the time of inspection.
