Observation:
- The ambient temperature of the display cooler was 10.7 degrees C. Items stored in display cooler were: sweet potato short cake, tiramisu cookie, fresh milk cream cake, red velvet cake, tiramisu cake, maple pecan cheesecake, and 7 different box cakes.
- The internal temperature of the red velvet cake measured 12.1 degrees C
- The thermometer placed in the unit measured 10 degrees C
- The staff claims all items have been stored since 8 am. (The inspection took place at 1:45 pm.)

Corrective action
- All items stored in display cooler must be discarded
- Items discarded at the time of inspection: 4 sweet potato short cakes, 4 tiramisu cookies, 2 freshmilk creamcakes, 3 red velvet cakes, 2 tiramisu cakes, 2 maple pecan cheesecakesm and 14 box cakes.

- mouse droppings noted in food prep station AND under coffee counter.
- According to the last reports (July, 10 / 2023), 2 mice were caught in these areas and these areas haven't been cleaned.

- handsinks are equipped with hot and cold running water, soap and paper towels.
- sanitizer solution measured 100-200 ppm Chlorine.
- dishwasher final temperature at plate: 71.1 degrees C
NOTE:
- The dishwasher had to run 3 cycles to heat up to 71.1 degrees C. Have the dishwasher serviced so it is working properly.
- Also, place washed AND rinsed dishes in the dishwasher for sanitizing. Make sure to rinse off the residues before placing in the dishwasher.

- tomatoes: 17 degrees C
---> after done making sandwiches, they will be stored in cooler (4 degrees C or below).
- Butter and eggs noted at room temperature to prepare for baking: eggs 21 degrees C, butter 19 degrees C.
