Observation (CORRECTED DURING INSPECTION):
At the end of the day, staff are only using sanitizer to clean surfaces. Sanitizer only kills germs, it doesn't remove food and grease. The surfaces are not clean and will attract pests.
Corrective Action(s):
Immediately clean all surfaces in the deli area with hot water and soap, wipe down with a hot water and a clean cloth, and then spray with sanitizer. Inform staff of the correct cleaning process at the end of the day. At time of inspection, staff were informed.

Comments

A routine inspection was conducted, the following observations were made:
- Coolers 4C or colder; and thermometers present.
- High temperature dishwasher had a rinse cycle temperature of 75.4C at the plate's surface, as per max/min thermometer.
- Hand sink stocked with liquid soap, paper towels, and running hot and cold water.
- Quats sanitizer in spray bottle was 200ppm. Bleach present for sanitizing cloths at the end of the night.
- Foods stored in food grade containers; covered; labeled; date coded; store in groups with deli meats separate from cheeses; and stored 6" off the floor on shelves or in cupboards.
- No expired foods for sale or in use. FIFO rules being followed.
- FoodSafe certified staff present.
- General sanitation level is good. A few flies found.
- Weekly monitoring visits by a professional pest company is being done.
