- Pest control program in place
- Handsinks adequately supplied
- Coolers achieving temperatures of less than or equal to 4 degrees Celsius
- Freezers achieving temperatures of less than or equal to -18 degrees Celsius
- Hot Holding achieving temperatures of greater than or equal to 60 degrees Celsius
- Dishwasher achieving final sanitizing rinse of greater than or equal to 50ppm Chlorine at the dish
- Sanitizer solution in use throughout food preparation areas and at concentrations of greater than or equal to 200ppm QUAT
- Ice machine and scoop in good sanitary condition in bar area and wait-station
- First In First out and date stamping methods observed in use
- Raw meat stored away from Ready to Eat food items
- Hair restraints (hats) in use in kitchen area
- Good hand washing practices observed - multiple staff observed to wash hands on line
- Light covers in place
- Cooler handles and seals in good sanitary condition
- Counter under the bar glass mats in good sanitary condition
- Lack of fruit flies observed in bar area
- Blender for drinks in bar area in EXCELLENT sanitary condition
- Entire dishwashing area in EXCELLENT sanitary condition: Lack of mould, lack of organic debris, lack of fruit flies - please inform staff to continue to maintain this high level of sanitation in this area
