Observation (CORRECTED DURING INSPECTION): Meat slicer not cleaned from report on September 23, 2022. Slicer observed to have food debris affixed to blade and guard.
Corrective Action(s): Operator to ensure all employees are properly trained on how to clean and sanitize the slicer. Slicer was cleaned and sanitized at time of inspection

Aluminum storage rack inside walk cooler not cleaned as debris observed affixed
Aluminum trays in walk in cooler not cleaned as outlined in report on Sept 23, 2022 and now lined with aluminum to cover debris
Corrective Action(s): Clean underside of shelving
Properly scrub all aluminum trays to remove build up of affixed old food debris
Properly wash aluminum racking to remove debris build up.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: Glasswasher repair technican did not properly repair glasswasher as final rinse was only 10ppm in final rinse. Final rinse set screw had to be turned by employee 5 full turns in order for a residual of 13.3ppm Iodine to be recorded in the final rinse. This was verified when employee used their Iodine test strips as a color change was visible to show that there was at least 12.5ppm iodine in the final rinse.
Glue board in UV fly trap not changed as outlined in report on Sept 23, 2022.
Hot water faucet at the 2 compartment sink not repaired as outlined in report on Sept 23, 2022 and observed to be dripping.
Corrective Action(s): Have glasswasher technician come in and re-service the glasswasher as there may be a small crack in the tubing.

Observation: Meat slicer observed to have not been cleaned from use yesterday.
Glasswasher observed to be not dispensing enough iodine in the final rinse. Final rinse tested at 6ppm.
Correction: Meat slicer is to be thoroughly cleaned and sanitized after use. Ensure a flashlight is used to verify all hard to reach areas have been properly cleaned.
All bar glassware is to be rewashed in the kitchen dishwasher as it is unknown as to when the final rinse of the iodine dropped below the minimum of 12.5ppm as no monitoring records have been maintained. .
