At today's inspection, dishwasher final rinse measure 76C at dish surface. Technician has serviced machine - some calcium deposits were removed and also a leak was observed that will be addressed.

Due to repeat non-compliance for the same violation, a violation ticket is being issued for the continued lack of sanitizing that has been documented in recent inspections.

Please continue to work on a permanent solution to ensure dishwasher sanitizing is occurring properly. Suggest the following:
1. Contract with your dishwasher service technician for routine monthly servicing of the machine
2. Look into the option of having a dedicated hot water line direct from the boiler to the kitchen without any hot water limiter / restrictions. Due to licensing requirements, water being provided to this end of the building, which includes residences and the kitchen, is being restricted to max 49C. Providing an unrestricted hot water line to kitchen would be cheaper and more effective than purchasing a new machine, and also will eliminate the potential for human error that has been documented.
