Observation: 1. Ice machine observed to have some minor stains/mold growth
2. Ventilation hood just above the grills observed to have grease accumulation around the vent panels
3. Tubes/pipes that are in the ice basin observed to have grime on the back side and is in contact with the ice.
Corrective Action(s): Please clean and sanitize the noted areas.

Comments

- Handwashing station fully equipped with hot and cold running water, liquid soap, paper towels. Observed staff have good hand wash practice.
- All coolers observed to be 4C and below
>>> Please ensure prep cooler lids are closed when not in active use.
>>> Prep cooler inserts surface temperature measure higher than 4C.
>>> Please ensure insert level foods are not over stocked and used up within 4hours during rush hours when lids stay open.
- All freezers measure -18C and below
- All food storage well maintained, dated, and covered when not in use. All food observed stored above the ground or in pest proof containers.
- All hot holding measure 60C and above and also time tracked
- QUAT sanitizer in buckets measure 200-400ppm
- Low temperature dishwasher final rinse at plate level measure 50ppm chlorine
- Temperature logs are maintained twice a day for coolers and freezers. Cooked proteins temperature checked hourly.
- New temperature monitoring system in place to ensure coolers maintain temperature.
- Chemicals also checked every morning and logged
- Staff has valid FOODSAFE certificate
- No signs of pests, pest control company routinely checks facility, last pest control report has no activity.
- Scoops for ice machine and basin stored separately.
