Observation (CORRECTED DURING INSPECTION): The pizza prep coolers are turned off at night (ingredients are stored in the walk-in cooler) and turned on in the morning. It was observed that pizza ingredients had been moved to the pizza prep before the temperature has dropped to safe temperature of 4C. As the premises has just opened and 2 hours have not passed since the foods were moved to the pizza prep coolers, all foods were moved back to the walk-in cooler.
Corrective Action(s): 1. Place a working thermometer in the pizza prep coolers
2. Ensure that foods are transferred once the prep coolers have reached 4C or below
