*Dishwasher has been serviced. Trays appeared sufficiently clean and detergent-free after completion of cycles (two cycles checked). Unit is still providing 50ppm chlorine sanitizer in final rinse. *Bleach sanitizer bottle properly labeled. Ensure a more permanent label is attached to the bottle, as permanent marker will wear off over time. *No improper cooling of large-volume items observed during inspection. *Probe thermometer is on order - ensure this is received by the end of this week, or obtain a temporary replacement by this time. Cooking temperatures (especially for raw meat and other high-risk items) must be checked to ensure food safety.
